Live Nuts

Almond KernalsI’ve recently learned from my friend and raw food expert, Wayne Bragg, that nuts have no nutritional value to us unless they are in their germination stage.

The reason for this is that Mother Nature has provided them with a preservation secret. To retain their ability to grow they have their grow switch turned off until they find themselves in a suitable environment to grow. Once this happens they release their enzymes to begin germination hence making their nutrition available. Makes sense doesn’t it? They then become ‘Live’ food, which is the most beneficial food to us.

So how do we manage to bring our nuts to life? It’s very simple and you will be amazed at how much better they taste. All we do is put our nuts in a clear dish and just cover them with water. Choose a spot that will provide a little sunlight. Leave the nuts to soak for 8 hours before draining water off. Leave them sit for 8 hours, then repeat the soaking process again. Drain water off and your nuts are at their peak to eat. Store your nuts in the fridge to maintain freshness.

I’ve been doing this with almonds and I’ve noticed that they become plumper, crisper, and have a creamier taste.

But wait there’s more  :)  Have you ever tasted almond milk? All you do is pop a cup of your germinating nuts into a blender with a litre water and blend till fine.  Then simply strain through a cloth or strainer and you have delicious creamy milk. You can even save the ground nuts in the fridge, and get another half a litre of milk from them next time.
